I invite you to enjoy it with a delicious cup of tea, like those at Dammann Frères or Thés de la Pagode.
Chocolate chips scones : the recipe
Ingredients
280g of flour
10g of baking soda (or baking powder)
50g of powdered sugar
2 pinches of salt
60g cold butter cut into small pieces
240g thick cream
100g of chocolate chips (personally, I prefer to chop the chocolate myself)
Icing sugar for decoration
Preheat the oven to 180°C – ventilated heat.
Pour the flour, baking soda, salt and sugar into the bowl of a food processor or large bowl. Mix quickly.
Add the butter and mix using the “pulse” function five or six times then the cream and “pulse” again a dozen times. The dough does not form a ball yet, it consists of large pieces of flour.
Transfer the dough to a floured work surface, add the chocolate chips and work gently by hand to homogenize the chocolate in the dough. Stop as soon as the dough gets into a ball.
On a work surface flour, spread the dough and cut out discs with a cookie cutter. Brush with water using a pastry brush and bake for 10-12 minutes on a baking sheet lined with parchment paper. The scones must barely golden.
Sprinkle with icing sugar before serving and enjoying. If you want to have them with a spoon of cream or extra jam as the classic version, go big or go home !
The scones can be kept in a hermetic box for a few days or they can be frozen.
