It’s strawberry season and today I’m offering an easy strawberry almond pie recipe. Even if I love to eat them plain, I also like pies but not just any pie. Indeed, I am not a fan of fruit pies with pastry cream and apricot on it. I find it too sweet and rich. So, since I tested this recipe in a 750G magazine, I swear by it !
A few years ago, I lived in the countryside and I had a farm a few kilometers away which had magnificent fields of strawberries, raspberries, blackberries. It was a treat ! Today, failing that, it was at the market that I was able to find my strawberries.
Easy Strawberry Almond Pie Recipe
Ingredients
For the shortcrust pastry
250g of flour
150g butter
100g sugar
1 egg
A little vanilla powder
Almond cream
100g soft butter
100g sugar
2 eggs
100g almond powder
2 tsp rum type alcohol. You can also use a red fruit liqueur (redcurrant ruby)
Garnish
500g strawberries
Mint leaves
Steps
Shortcrust pastry
Mix all the ingredients in a large bowl by hand, wooden spoon or using your food processor.
With this quantity, you can make two pies (about 6 people – not too greedy !). You can freeze the rest.
Let the dough rest for 2 hours or make it the day before.
Spread the dough on a floured work surface and cut out the shape that suits you (circle, pastry rectangle). Place the dough in the mold, prick the bottom with a fork and bake it white 15 min at 180°C (th. 6). To prevent the dough from swelling, spread the bottom of the beans wrapped in aluminum foil.
Almond cream
Mix all the ingredients with a spatula until the texture is smooth.
Take out the pie, fill it two-thirds full with the almond cream and continue cooking for 15 to 20 minutes, lowering the temperature to 160°C (th. 5-6). The dough should be golden and soft.
Syrup
Make a syrup to punch the pie. In a saucepan, mix 10cl of water and 50g of sugar then cold add a few drops of alcohol that you have chosen. Gently punch the pie: brush with the syrup to give it softness.
Generally, I don’t use the full amount of syrup I make.
Garnish
Wash the strawberries and cut them vertically, in half or in four depending on their size. Store them harmoniously on the bottom of the pie.
For decoration (and taste !), It is possible to sprinkle the pie with some roasted oilseeds such as pistachios or crushed almonds and chopped mint.
