Homemade baguettes

Baking homemade baguettes, a sweet dream that gourmands caress ! I think there’s no better smell in a kitchen than hot bread baked in the oven. I tested the recipe of Nadia Paprikas – adding my personal touch that I give you here.

Even if I have a mostly gluten-free diet for intestinal and digestive comfort, I offer myself a little pleasure from time to time, such as traditional Italian pasta or tasty french bread. Once in a while, it’s a great pleasure for my taste buds !

Homemade baguettes : the recipe

Ingredients for 4 half baguettes

500g flour (organic for me T60)

300 ml of water

24g fresh yeast or 1 sachet of dried baker yeast

10g salt

Seeds (mix in organic store)

In a large bowl or the bowl of your food processor, pour the flour, salt and seeds. Mix.

In a measuring cup, measure 300 ml of warm (not hot) water and dissolve the yeast in it. Slowly add water and yeast while mixing until a homogeneous dough.

Form a ball with the dough, put it in the bowl or the bowl of a food processor and lightly flour. Cover with a clean towel covered with a damp towel and let raise for 1 hour in a warm place.

On a floured surface, place the dough and “degas” it, meaning you crush it to release trapped air. Divide the dough into 4 (about 200g each dough) and form the baguettes.

Take a piece of dough, do wheeler into a ball, flatten with the palm of the hand to form a rectangle by not having it to flat. Fold as a portfolio: the upper part to the middle. Weld it with the palm of the hand. Take the lower part of the dough and weld with high pinching strong between the two parts.

Turn the dough so that the weld can be found below. Place both hands on the dough and gradually start to roll on itself  spreading your hands until you reach the size you want.

Repeat the process and place them in a special baguettes mold (for more regular forms) or on a tray lined with baking paper.

Cover again the baguettes (same process as above) and raise for about 30 minutes (the baguettes need to double size) at room temperature.

Preheat your oven to 240°C with a bowl full of water. Sprinkle the baguettes with flour using a small strainer and incised them before baking in the oven at 220°C. Bake for 20 minutes.

Let cool and enjoy.
