With this extended weekend, I suggest you make a vegan puffed rice granola recipe that you can also use to make cereal bars. In addition, the recipe is completely vegan.
This recipe is ultra comforting, especially during lockdown. I like to eat it for breakfast but also sometimes for dessert for a touch of sweetness. Just a little crunchy piece at the end of the meal is really super nice ! If you want to change the dried fruits used, you can choose the ones that make you happy.
Vegan puffed rice granola recipe
Ingredients
150g puffed rice (found on Kazidomi)
50g gluten-free muesli without added sugar
150g of dried fruit mixes
30g cranberries
100g Medjoul dates
30g flax seeds
1 tsp cinnamon
1 pinch of salt
3 tablespoons virgin coconut oil
140g peanut puree
15 cl maple syrup
Preheat the oven to 180°C (rotating heat).
Combine all dry ingredients in a large bowl. Heat all the wet ingredients until the preparation is smooth.
Pour the wet mixture over the dry ingredients. Finish mixing with your hands if necessary so that the mixture is as homogeneous as possible.
In a square dish covered with parchment paper, pack the preparation and smooth it.
Cook the preparation for about 15 minutes at 180°C until the top colors lightly. The granola will then be a little soft. For more crisp, cook for 5 more minutes.
Let cool completely before detailing to break the preparation into pieces.
Store in an airtight container or jar.
To make cereal bars: use the same recipe and bake until the result is crisp. Let cool before cutting the bars.
