This week, I’m sharing with you a savory recipe : tuna croquettes. So, for those who have been following me for a while, you may be wide-eyed to see me publish a recipe based on fish.
Indeed, since 2016, I had switched to a 100% vegetarian diet so without meat or fish. Recently, following the increase in my physical activity, I reintroduced some animal proteins (a bit of fish) because despite the dietary balance that I put in place on a daily basis, I could not reach the protein quota which my body needs. I tried food supplements but it’s not too much of my thing so I readjusted my plate. I allow myself a little more flexibility but I also take great care in what I’m buying. For example, tuna, I only take it in organic stores because there are fewer chemicals in it and it comes from sustainable fishing (I buy a local french brand).
Tuna croquettes : easy healthy recipe
Ingredients for 6 croquettes / patties
1 1/2 can of natural tuna
3 eggs
60g raw semolina
Olive oil
mixtures of herbs (parsley, chives, etc.)
Salt, pepper
First, cook the semolina. Put the semolina in a bowl, then cover with boiling water and cover with a lid or plate so that it simmers.
In a salad bowl, crumble the tuna with a fork. Break the eggs one by one and mix well before adding the next egg.
Pour the semolina into the preparation and homogenize everything.
Lightly salt, pepper and add the herbs of your choice (I use a mixture of different dehydrated herbs).
To make these croquettes, I used cookie cutters but this is optional. If you do like me, oil your mold beforehand. This technique allowed me to avoid frying the croquettes. However, if you prefer to go through frying, don’t hesitate !
In a large pan, pour a little oil and spread it using a brush. Place the cookie cutters and pour the preparation into it. Once the preparation begins to be well cooked on one side, turn the cookie cutter using a spatula to cook the second side.
Once cooked, place your croquette in a baking dish. Repeat the operation until there is no more dough.
To warm the whole thing and finish cooking, bake the croquettes for 10 minutes at 180°C (rotating heat).
Enjoy with the salad of your choice.
