Mint pea soup : the recipe
Ingredients
1 shallot
200g peas (here frozen)
1 zucchini
1 vegetable cube broth (I always choose mine without palm oil)
1 tbsp vegetable cream
Olive oil
A few mint leaves
Salt, pepper
Peel and mince the shallot.
Wash and slice the zucchini.
In a large pan, heat the oil and brown the shallot.
Add the zucchini rings and peas. Mix well so that all the vegetables soak up.
Crumble the broth and cover with water.
Simmer for about fifteen minutes.
Mix and add a dash of vegetable cream.
Salt and pepper to taste.
Add a few mint leaves and mix again.
Serve.
Can be enjoyed both cold and hot.
