Banana bread is a recipe that I make regularly when I have a little too many bananas or when I get friends for tea. From one time to another, I never make the same recipe – it all depends on what I have on hand and my desires ! This time I made it dairy free.
Banana Bread : dairy free recipe
Ingredients
4 ripe bananas
4 eggs
150g wholemeal flour
80g muesli
150g cane sugar
1 teaspoon baking soda
1 tablespoon sultamine raisins
1 tablespoon dried golden raisins
1 tablespoon peanut butter
Flaked almonds
Preheat the oven to 180°C on rotating heat.
A little coconut oil for the mold
Peel the bananas. In a large bowl, mash the fruits. Add the eggs one by one and mix well.
Pour the dry ingredients into the preparation : flour, sugar, muesli and baking soda. Homogenize everything.
Finish with the peanut butter and raisins.
In a cake mold, place a little coconut oil and spread the oil so that the cake turns out well.
Pour the dough and sprinkle with flaked almonds.
Bake for about thirty minutes.
Once the cake is baked (do the knife blade test), allow to cool and unmold the cake.
