Ayant rarement du lait et du beurre dans mon frigo, j’ai changé certains ingrédients pour une version sans lactose. Pour un topping sans lactose, réalisez un glaçage royal!

 

Ingrédients

Pour la pâte à brioche

30g d’huile de coco

30g de sucre

120g de lait (j’ai utilisé du lait de coco)

300g de farine semi-complète

10g de levure fraîche de boulanger

1 oeuf

1 pincée de sel

 

Pour la garniture

1 CS de farine

80g de sucre rapadura (ou sucre roux)

1 CS de cannelle

25g d’huile de coco

2 CS de lait (de coco)

 

Pour le topping

60g de fromage frais (type Philadelphia, St Moret…)

50g de sucre glace

1/2 cc d’arôme vanille

Du lait pour assouplir (facultatif)

 

Faire fondre l’huile de coco dans le lait, le sucre et le sel au micro-onde (ou à la casserole en mélangeant bien). Attention à ce que la préparation ne soit pas trop chaude sinon cela tuera la levure.

Dans un grand saladier ou le bol de votre robot, mélanger la farine avec la levure émiettée. Ajouter l’oeuf et les liquides tièdes puis pétrir jusque »à obtenir une pâte lisse et élastique, soit 7 à 10 minutes.

Laisser reposer sous un linge légèrement humide pendant 1heure, la pâte doit doubler de volume.

 

Mélanger la farine avec le sucre rapadura et la cannelle.

Déposer le pâton sur le plan de travail légèrement fariné. L’étaler en rectangle.

Badigeonner avec un pinceau l’huile fondue puis saupoudrer du mélange à la cannelle.

Rouler la pâte sur la longueur et la découper en 9 morceaux. Les déposer dans un moule carré ou rond (je n’avais pas de carré) graissé et fariné et laisser gonfler sous un linge légèrement humide 1 heure.

 

Préchauffer le four à 180°C.

Badigeonner de lait et enfourner pour 20 minutes.

 

Pendant ce temps, préparer le topping en mélangeant tous les ingrédient ensemble, allongez avec le lait – si besoin – afin d’avoir la texture souhaitée, ni trop ferme ni trop liquide.

 

Sortir les cinnamon rolls du four et les tartiner de suite avec le topping. Les goûter dans votre élan !

Having rarely milk and butter in my fridge, I changed some ingredients to a dairy-free version. For lactose-free topping, make a royal icing!

Ingredients

For brioche dough

30g of coconut oil
30g of sugar
120g of milk (I used coconut milk)
300g of half wheat flour
10g fresh baker’s yeast
1 egg
1 pinch of salt

For the inside

1 tablespoon of flour
80g of rapadura sugar (or brown sugar)
1 tablespoon cinnamon
25g of coconut oil
2 CS of milk (coconut)

For the topping

60g of Philadelphia
50g icing sugar
1/2 tsp vanilla flavor
Milk to soften (optional)


Melt the coconut oil in the milk, sugar and salt in the microwave (or in a pan with mixing well). Be careful that the preparation is not too hot otherwise it will kill the yeast.


In a large bowl or the bowl of your robot, mix the flour with the crumbled yeast. Add the egg and lukewarm liquids and knead until smooth and elastic dough, 7 to 10 minutes.
Leave to rest under a lightly damp cloth for 1 hour, the dough must double in volume.


Mix the flour with the rapadura sugar and the cinnamon.


Place dough on a lightly floured work surface. Spread it in a rectangle.


Spread the melted oil with a brush and sprinkle with the cinnamon mixture.


Roll the dough over the length and cut into 9 pieces. Place them in a square or round pan (I did not have a square) greased and floured and let grow under a lightly damp cloth for 1 hour.


Preheat oven to 180°C.


Brush with milk and bake for 20 minutes.


Meanwhile, prepare the topping by mixing all the ingredients together, soften with the milk – if necessary – in order to have the desired texture, neither too firm nor too liquid.


Remove the cinnamon rolls from the oven and spread them on with the topping. Taste them when they are still warm!
